So I quit my job today b.c I have never felt so much disrespect in my life and honestly I’d rather wash dishes than work for a big corporation that doesn’t give a fuck about me and for once in a really long time I’m starting to feel some hope for my future and more importantly my mental health. Summers are always the hardest for me but I’m alive and in love and I guess that’s alright for now :) yay for small victories

Spell to Stop Procrastination

Materials:

  • incense (any scent, though mint or bergamot are good for motivation)

Go to the place where the task(s) needs to be completed (if possible) and envision the task completed. Think about how good and relieved you’ll feel to have your task accomplished. Light the incense and cleanse the area. If you cannot get to that place, then infuse the incense with your intention to complete the task. Say the following:

This is no race but I need speed
To help me complete my task indeed.
This incense burns for fire and air,
My procrastination is causing despair.
Never to hurt and only to please,
I must quicken my pace with grace and ease.

Sure thang, let me do that riiight now…

~*Mexican One Pan Quinoa*~

Ingredients:

1 cup quinoa

1 cup vegetable stock

1 cup corn kernels, drained

1 x 400g can of black beans, drained (unfortunately our stupid small town Coles didn’t have black beans, so you can substitute with red kidney beans and it works just as fine)

1 x 400g can chopped tomatoes

1 jalapeño (again, no whole fresh jalapeños at Coles, but I improvised with a green chilli and it still worked nicely. Plus it gave a bit of colour to an otherwise overwhelmingly brick red dish)

1 medium red capsicum, chopped

1 avocado, diced

The juice of 1 fresh lime

2 garlic gloves, minced

1/2 tsp of chilli powder

1/2 tsp of cumin

2 tsp of chopped coriander, coarsely chopped (personally I find it odd using tablespoon measurements for coriander, so I just put in as much as I thought was good)

Pepper, to taste

2 tsp olive oil

Method:

Add your olive oil, chilli and garlic to the pan and let them heat up until fragrant (about one minute)

Next, add your quinoa, vegetable stock, beans, corn, tomatoes, capsicum, chilli powder and cumin. Bring to the boil.

Once boiled, turn your stove down to low heat and simmer ingredients, covered, for twenty minutes.

Squeeze your lime juice straight into the pan and stir through avocado and coriander. Serve immediately!

And that’s it! You’ve made probably one of the easiest non-raw vegan dishes known to humanity. This recipe is meant to serve four, but I say hey! Eat the whole damn thing, you deserve it.
